Roasted Fish with Vegetables

Ingredients (for 6-8 people)

2 kilos fish suitable for roast
3 zucchini cut into slices lengthwise
1 onion cut in four
3 sliced ​​carrots lengthwise
2-3 stalks of parsley
100 ml White wine
150 ml Olive oil.
Salt Pepper

Method

1. Preheat the oven to 200ºC. Cut the zucchini and carrots lengthwise in thin slices and the onion into quarters.
2. Put the salt and pepper on the fish the parsley stalks in its belly.
3. Place the fish in the Fest non-stick oven tray with the vegetables around and add the wine and then the olive oil. Put the oven tray  in the preheated oven (200ºC). You don’t bother until it’s time to take it out of the oven. Depending on the fish it will take 30 to 45 minutes to roast it(approximately).

Serving

Take the fish out of the oven and place it very carefully on a plate. Fill the plate with the vegetables around it or (better) place them in another serving dish so that you have comfort in cleaning the fish from the basic bones, on the table.
