Slow cooked beef

Ingredients:

  • 800g beef chuck, cut into 3 pieces
  • Flour for the beef
  • 80ml extra virgin olive oil
  • 2 onions
  • 1 leek
  • 2 carrots
  • Juice from 1 lemon
  • 1 tsp smoked paprika
  • 1/2 tsp chili flakes
  • 1/2 tsp thyme
  • Salt and pepper

For serving:

  • 100g saganaki cheese
  • 1 small bunch of fresh parsley

Preparation: Pat the beef dry with kitchen paper to remove moisture, flour it on all sides, and season with freshly ground pepper.

Heat half the olive oil in the pan until hot, then brown the beef on all sides to seal in its juices.

Once browned, add the remaining ingredients and stir well. Cover the pan with a heat-resistant lid and transfer to the oven.

Bake at 170°C for 3 hours, checking every hour and adding a bit of water if needed.

A few minutes before serving, slice the saganaki cheese and toast it in a non-stick pan (without oil) until golden on both sides.

To serve, place the sauce from the caramelized vegetables on a large platter, add the beef on top, and finish with the saganaki cheese and chopped parsley.

Serve with rice or potatoes.
