Fettuccine with Smoked Salmon, Cream and Vodka

Ingredients for 4 people
50 gr. butter
150 gr. smoked salmon in small pieces (1-2 cm)
1 medium lemon, juice
250 gr. whipping cream
60 ml. vodka

Method
Put in a large Fest’s non stick casserole, 4-5 liters of water to boil and once the boiling starts add 2 tbsp. of salt. Add the fettuccini and after stirring, let them boil for 6 ‘without covering with the lid.2. Prepare the sauce
Melt the butter in a large Fest’s non-stick frypan (which will fit all the fettuccine). Add the salmon pieces and lemon juice.
Stir for 1-2 minutes and add the cream and vodka. Add pepper and leave on low heat until most of the liquid has evaporated.
3. Stir the pasta into the sauce
When the fettuccines are ready, add them to the sauce, mix well and add about 50 ml. from the boiled water to bind the sauce perfectly and to properly moisten the fettuccines until they reach the plate.
Cooking tip: Keep a cup of pasta water because fettuccines, as a paste with a large surface, tend to dry relatively quickly and need “rejuvenation”.
Serving
Serve directly from the hot pan in deep dishes and of course without grated cheese since we have fish with delicate flavors. But do not forget to add fresh pepper .In brave doses!
